Greek Pasta

Pasta never tasted so good! Mix whole grain pasta with olives, feta, grape tomatoes, oil and balsamic dressing for an easy meal that will make your taste buds sing.


Adapted from "The Ultimate Healthy Eating Plan." (2002, Liz Pearson RD and Marilyn Smith HEc.)


Makes 4 Servings


Ingredients


1 package (375g) whole wheat rotini

2 pints grape tomatoes, cut in half

1 can (375mL) slices olives, drained and rinsed

2 cups light feta, crumbled

2 tbsp balsamic vinegar


Instructions

  1. Cook pasta according to package directions. Drain and rinse.

  2. In a large bowl, combine tomatoes, olives, feta, balsamic vinegar.

  3. Add pasta to tomato mixture. Mix thoroughly. Serve warm (or cold).
