Give macaroni and cheese a twist by using feta cheese, spinach, and eggs. This is a tasty way to get your leafy green vegetables, which are rich in folate, at your meal. Yummy for the whole family! #breakfoodboredom

Makes 6 servings
Ingredients
1/2 375g box whole wheat elbow pasta
2 cups feta cheese, crumbled
1 1/2 cups milk
3 eggs
1 bunch spinach
2-3 Tbsp ground flax
Instructions
Cook the pasta according to package directions; drain, and rinse. Transfer pasta to a 9inch x 9inch glass baking dish; add feta and mix.
Preheat oven to 400*F.
Steam spinach. Chop coarsely, add to baking dish, and mix.
In a medium bowl whisk together eggs and milk; add to baking dish and mix thoroughly.
Sprinkle ground flax evenly over pasta mixture.
Bake for 35 minutes. Let stand several minutes before serving.
